Vegan Breakfast Club Sandwich

Stack up something more substantial for breakfast that will have you energised for the whole day. These vegan-friendly sandwiches really make the most of our absolutely delicious vegan ‘facon,’ a fantastically meaty filler that goes down a treat with a good helping of fresh salad and avocado.

What you'll need

  • 2 tomatoes, thinly sliced
  • 1 ripe avocado, sliced
  • 3tbsp vegan mayonnaise
  • 50g iceberg lettuce, shredded
  • 6 slices Hovis Soft White Farmhouse Bread, toasted
  • 6 slices La Vie Vegan Bacon

How to make

  1. Spread 4 slices of toast with the mayonnaise, divide the tomatoes and lettuce over 2 slices, season and top with the other 2 slices.
  2. Cook the vegan bacon according to pack instructions and place on top of the toast stack with the avocado, top with the final layer of toast. Cut in half to serve.
