How to make

  1. Preheat the oven to 150°C / Gas Mark 2.
  2. Line a medium-sized baking tin with baking paper and lightly grease it with a bit of the butter.
  3. Melt the remaining butter in a large saucepan over medium heat.
  4. Stir in the honey, vanilla extract, and light brown sugar until everything is melted and well combined.
  5. Remove the pan from the heat and fold in the oats or granola, mixing until fully coated.
  6. If you like, stir in a handful of dried fruit, chopped nuts, or milk chocolate for extra flavour.
  7. Pour the mixture into the prepared tin and press it down firmly with the back of a spoon to level the surface.
  8. Bake for 30–40 minutes until golden around the edges.
  9. Let cool in the tin for 10 minutes, then slice into bars.
  10. Gently melt the milk chocolate and drizzle it over the top of the flapjacks for a sweet finishing touch.
  11. Allow to cool completely before serving or storing.
