The Ultimate Stilton, Bacon and Chutney Toastie

The tastiest chutney deserves the strongest cheese to set it off. This extra British, extra flavoursome take on a classic cheese and bacon makes the most satisfying buttie imaginable. Pack your grilled bacon and stilton with rich tomato chutney between thick buttered slices of sourdough, wholemeal or white, loaf because with flavours this rich, any bread will do!

What you'll need

  • 2 rashers of bacon
  • A small helping of butter
  • 2tbsps Rubies in the Rubble Spicy Tomato Chutney
  • 2 slices of your favourite bread
  • 1 slice of Tuxford & Tebbutt 1780 Blue Aged Reserve Stilton, crumbled

How to make

  1. Start by grilling or frying your bacon for a couple of minutes on each side.
  2. While cooking, thickly butter each slice of your favourite bread.
  3. Layer up the bacon with a generous helping of spicy tomato chutney on either side, before crumbling the stilton cheese on top.
  4. Top the sandwich and grill or fry for another minute on each side until the bread is toasty brown and the fillings are heated through.
