Homemade Seville Orange Marmalade

Seville oranges are the famously flavoursome citruses, in demand for a myriad of uses, from essential oils to yoghurts. The fruit’s distinctly strong bitter taste makes it particularly popular for turning into marmalade, and Wholegood’s fresh organic Seville oranges are especially good for it.

What you'll need

  • 1.2kg preserving or granulated sugar
  • Juice of a lemon
  • 650g Seville oranges

How to make

  1. Using a large preserving pan, boil the whole oranges in water along with the lemon juice. Once brought to the boil, allow to simmer very gently for two hours, ensuring that the oranges stay submerged.
  2. Remove the oranges from the liquid and allow to cool. Once cool, remove all the pips and pith, and return the rest of the oranges to the pan.
  3. Bring to the boil for five minutes, then strain the liquid through a sieve, pressing the pulp through with a wooden spoon.
  4. Gently warm the sugar at low temperature in the oven or microwave, and finely cut the orange peel into shreds. Combine this with the liquid, returned to the pan. Stir over a low heat for ten minutes, then bring to the boil and allow to bubble for 15 – 25 minutes until setting point is reached.
  5. Take the pan off the heat and skim any residues from the surface. Leave the marmalade to cool in the pan for 20 minutes, before sealing in sterilised jars.
