Deliciously Ella Bircher Muesli Pancakes

Deliciously Ella’s fruity Bircher Muesli is a family favourite. They finely mill the gluten free oats, before stirring in chopped red apple, raisins and raspberry pieces for a little sweetness. This creative recipe from Deliciously Ella makes the most of this extraordinary cereal to create the most perfect weekend breakfast treat.

What you'll need

  • 400ml almond milk
  • 1tbsp maple syrup
  • 50g Deliciously Ella Bircher Muesli
  • 1tsp baking powder
  • 300g plain flour
  • 2tbsps melted coconut oil (plus more for cooking)
  • 1tsp chia seeds

How to make

  1. Stir all of the pancake ingredients together to form a smooth, thick batter. If it feels a little thin, leave it to sit for 5-10 minutes.
  2. Warm some coconut oil in a pan over a medium heat. Once warm, spoon a large tablespoon of pancake batter into the pan, using a wooden spoon to spread out the mixture.
  3. Cook on one side for 3-4 minutes until golden, before turning and cooking on the other side for 2-3 minutes.
  4. Repeat until the pancake mixture is finished.
  5. To serve top with fruit, maple syrup or your favourite dairy free yoghurt.
