Summery Caprese Salad with Isle of Wight Heritage Tomatoes

A fantastically fresh side dish, this classic sweet and savoury salad serves up perfectly as part of a summery al fresco spread, adding a refreshing burst of fruity freshness to barbecues. The Tomato Stall’s boxes of vibrant sun-ripened heritage tomatoes bring a wonderful spectrum of flavours and juiciness to every dish, and need little in the way of dressing.

What you'll need

  • 600g mixed Isle of Wight heritage tomatoes
  • 2tbsp balsamic vinegar
  • Black pepper
  • 2tbsp olive oil
  • 250g mozzarella
  • A handful basil leaves
  • A pinch sea salt

How to make

  1. Start by thickly slicing the larger tomatoes widthways, and the smaller tomatoes into wedges and halves.
  2. Slice up the mozzarella to 1cm thick discs.
  3. Arrange the tomatoes and mozzarella onto plate in an overlapping pattern.
  4. Scatter the basil leaves all over the top.
  5. In a small dish, stir together the olive oil and balsamic vinegar with a dash of sea salt.
  6. Drizzle the dressing all over the salad, and finish off with a crushing of black pepper.
