What you'll need

  • Salt and pepper for seasoning
  • 2 small jacket potatoes, finely shredded
  • 1 egg, beaten
  • 30g plain flour
  • 2tbsp olive oil, for frying
  • 1 white onion, finely chopped

How to make

  1. After preparing the ingredients, stir together the potato, onion, flour and egg in a large mixing bowl.
  2. In a shallow frying pan, heat the oil over a medium heat. Once sizzling, form the mixture into small pancakes at 2cm thickness maximum and place in the pan.
  3. After about five minutes and the hash browns are browning on one side, flip and fry on the other side.
  4. Once fully cooked, season with salt and pepper and serve. Why not try layering them between rashers of crispy bacon with a topping of poached egg and a side serving of cherry tomatoes?
