Baked Cheese and Egg Toasts

Give your eggy breakfast a luxurious twist with this fantastically tasty treat. You can even spice it up for a more filling lunch by enjoying it alongside your favourite vegetable or chicken soup. Simply cook the circles of bread alongside and serve with a good helping of extra cheese.

What you'll need

  • 200g Godminster Vintage Organic Cheddar, grated
  • 4tbsp Pure Nature organic natural yoghurt
  • 8 slices Jacksons Soft White Bloomer
  • 4 organic eggs
  • 50g butter, softened

How to make

  1. Preheat the oven to 200oC, gas mark 6.
  2. Butter the bread on 1 side. Place 4 slices, butter side down, on a large baking tray.
  3. Mix 175g cheese with the yoghurt and spread over the 4 slices on the tray.
  4. Cut a 7cm circle in the centre of the remaining bread and place on top of the cheese, butter side up.
  5. Crack an egg into each hole and sprinkle over the remaining cheese, season with black pepper and bake for 12-15 minutes until golden, crispy and the egg white has just set.
