Thai'm For Something New: Extra Spicy Thai Veggie Bites

What you'll need

  • 1 cauliflower
  • 1 broccoli
  • 1/2 courgette
  • tbsp garlic puree
  • 1tbsp mixed spice
  • 380ml coconut m*lk
  • 1tbsp coriander
  • 1 cube of ginger
  • 1tbsp olive oil
  • 4 - 6 carrots
  • 2 leeks, thinly sliced
  • 1 large onion, diced
  • 50g plain flour
  • 1/2 cauliflower made into cauliflower rice
  • 1tbsp Thai Green Curry Paste

How to make

  1. Use a steamer to get started on the broccoli, cauliflower, carrots and peas. Give them about 20 minutes.
  2. Fry the onion together with the ginger and garlic in a little olive oil until golden.
  3. To the frying pan, add the courgette, leek and curry paste, frying for a further 5 minutes.
  4. Gradually add the coconut milk, followed by the cauliflower rice and remaining seasoning. Lower the heat and simmer for 10 minutes.
  5. Add the steamed veggies into the mix, take off the heat, then leave to cool.
  6. After an hour of cooling, mould the mix into bite sized snacks and pop them into the air fryer, cooking at 180 degrees.
  7. After 10 minutes, take them out and serve with your favourite dip.
