Barbecue Tomato Salsa

Bursting with fresh, zesty flavour, this simple salsa recipe will be sure to add a kick to your summer barbecues. Not only does it make a delicious dip, it’s the perfect partner to grilled burgers, bacon, sausages and kebabs.

What you'll need

  • 3 tbsp fresh coriander
  • 200g tomatoes (fresh or tinned)
  • 1 lime
  • 1 small red or green chilli
  • 1 tbsp olive oil
  • 1 avocado (optional)
  • 1/2 an onion
  • 1 tbsp white wine vinegar
  • Salt and pepper to season

How to make

  1. Finely chop the tomatoes, onions and avocado and place into a mixing bowl.
  2. De-seed and finely slice the chilli before adding it to the mix.
  3. Juice the lime, adding the juice to the bowl, alongside the vinegar and olive oil, and stir everything together.
  4. If you want a smoother salsa that doubles up as a great burger sauce, toss the ingredients into a processor and blitz for a few seconds. Skip this step if you prefer a chunky mix.
  5. Roughly chop the coriander, adding it to the mix, along with some salt and pepper for seasoning.
