Tomato, Mozzarella and Prosciutto Salad with Raspberry Dressing

Serve up an eye-catching salad with classic tomato and mozzarella, as well as a sweet and unusual addition of homemade raspberry and honey dressing. What you'll need

  • 1tbsp honey
  • A small bunch basil, leaves picked and any larger ones torn
  • 2 x 125g balls good-quality mozzarella cheese
  • About 600g mixed tomatoes
  • Sea salt and black pepper for seasoning
  • 100g raspberries
  • 2tbsps white wine vinegar
  • 12 slices prosciutto

How to make

  1. Cut the tomatoes into a mixture of slices and large chunks, halving any smaller ones and arrange on a big serving plate.
  2. Season with sea salt and black pepper.
  3. Slice the mozzarella and tuck between the slices of tomato, along with the prosciutto.
  4. In a small bowl mix the raspberries, white wine vinegar and honey, crushing the raspberries with a fork.
  5. Drizzle over the raspberry dressing and sprinkle over the basil leaves to serve.
