Vegan Pancakes

Check out this perfect vegan recipe for light, fluffy pancakes. Made with wholesome almond milk and lightly flavoured with coconut, it makes a delicious batch of pancakes no matter how you choose to enjoy them. What you'll need

  • A scattering of your favourite berries
  • 1 packet pancake mix
  • A drizzle of maple syrup for each serving
  • A pinch of salt
  • 1tsp coconut oil for frying
  • 60ml almond m*lk
  • 1tsp vanilla extract
  • A dollop of The Coconut Collaborative Dairy Free Vanilla Coconut Yoghurt for each serving

How to make

  1. In a large bowl, mix together the full packet of pancake mix with the almond milk. Add the salt and vanilla extract, and whisk until smooth.
  2. Melt a little coconut oil in a pan over medium heat.
  3. Add two tablespoons of the pancake mixture and fry until bubbles start to appear.
  4. Flip the pancake onto its other side and fry until golden.
  5. Serve with a scoop of coconut yoghurt, a drizzle of maple syrup and fresh blueberries or blackberries.
