How To Make Over-Easy Fried Eggs

How do you like your eggs in the morning? Well, if you like yours with runny yolks and soft whites, you’re in luck! Our recipe for over-easy fried eggs involves frying the egg on one side before flipping it over to briefly fry the other, enveloping the yolk in tasty egg white. Sounds delish, right? What you'll need

  • 1 free-range egg
  • ½ lemon, chopped into wedges, to season
  • 2 tbsp unsalted butter
  • Sprinkling of salt and freshly ground black pepper, to season
  • ½ avocado, peeled with the stone removed

How to make

  1. Start by chopping your avocado into slices. Season with a squeeze of lemon, salt and pepper.
  2. Melt the butter in a small non-stick pan over a low-medium heat.
  3. Once bubbling, gently crack the egg into the pan. Season with a pinch of salt and pepper and cook until the egg whites at the bottom have just set. This should be around 3 minutes.
  4. Now it’s time to flip! Carefully slide a spatula underneath the egg, lift the egg slightly and quickly flip. To make sure the yolk stays in one piece, tilt the pan while flipping and keep the egg as close to the pan as possible.
  5. Cook for 10-15 seconds on that side then flip the egg back to its original side and serve with the seasoned avocado slices!
