Peanut Butter and Chocolate Fudge Overnight Oats

With the summer holidays drawing to a close, a healthy breakfast might be the right idea, but a naughty one is so tempting, too! These overnight oats are fun to make and add some chocolatey decadence to the most important meal of the day. Chilled overnight, they’re all ready in the morning, and they’re sure to get the kids out of bed and rushing to the breakfast table!

What you'll need

  • 1-2tbsp maple syrup (adjust to taste)
  • 200g oats
  • 2tbsps crushed peanuts
  • 1 ripe banana
  • 350ml almond milk
  • 2tbsp smooth peanut butter
  • 40g dark chocolate, melted

How to make

  1. Combine the mashed ripe banana, oats, almond milk, and maple syrup in a bowl.
  2. Transfer the mixture into a bowl or a jar.
  3. Spread a layer of smooth peanut butter over the oat mixture.
  4. Drizzle the melted dark chocolate over the peanut butter layer.
  5. Sprinkle the crushed peanuts on top.
  6. Place the container in the refrigerator and enjoy a delightful and satisfying breakfast next morning.
