Perfect Scrambled Egg and Smoked Salmon Bagel Recipe

What you'll need

  • 2 bagels, split
  • 2 tbsp salted butter
  • Pinch of salt and cracked black pepper, to serve
  • 2 salad tomatoes, chopped
  • 50g sliced smoked salmon
  • 4 medium or large eggs
  • 40ml whole milk
  • Butter, to serve

How to make

  1. Carefully crack the eggs into a small or medium-sized bowl. Add the milk and lightly whisk until the whites and yolks are combined.
  2. Heat a small non-stick pan over medium heat. Slowly melt a teaspoon of butter in the pan, making sure the base and sides are covered.
  3. As soon as the butter begins to foam, pour in the egg mix, add the chopped tomatoes and stir gently, scraping the bottom of the pan as you go. Don’t whisk, as you want the eggs to gently break up and scramble!
  4. Once the eggs are cooked, toast the bagels. When toasted, spread each side with a generous layer of butter.
  5. Once buttered, add the sliced smoked salmon followed by the eggs on top. Season with salt and black pepper and serve!
