Make Your Own Goats Cheese

Surprisingly simple to make and completely delicious with so many meals, a creamy, crumbly goats cheese is a must-have ingredient for fresh summery salads and so much more. All you need is Delamere’s rich and creamy goats milk as well as a few simple bits you’ve probably already got in your kitchen.

What you'll need

  • 2tbsp white vinegar
  • A few tablespoons of dried herbs
  • 950ml whole goats milk
  • 80ml lemon juice
  • A pinch of salt

How to make

  1. Start by preparing your colander by lining it with 2 layers of cheesecloth.
  2. Heat the goats milk over the stove on a medium heat and stir continually.
  3. Once the milk reaches 80 degrees, remove it from the stove and stir in the lemon juice and vinegar.
  4. Allow the mixture to curdle into small pieces for about 30 minutes.
  5. Gently stir in the salt, then slowly ladle the mixture into the cheesecloth-lined colander.
  6. Gather together the cheesecloth, make a knot at the top and hang it over the sink to drip.
  7. After an hour, place the mixture on a clean surface, sprinkle over your favourite herbs, then shape it into a long roll.
  8. Refrigerate for a few hours, then crumble over a fresh summer salad and enjoy.
