Fried Egg Sandwich

What you'll need

  • 1 avocado, peeled and sliced
  • 2 tbsp mayonnaise
  • to season salt and pepper
  • 15g salted butter
  • 1 salad tomato, chopped
  • 35g lettuce, chopped
  • White cob bread, sliced
  • 1 large free-range egg

How to make

  1. Melt the butter slowly in a non-stick frying pan over a really low heat
  2. Once bubbling, gently crack your egg into the pan.
  3. Leave on the lowest heat to cook slowly, until the whites solidify. This could take around 5 minutes!
  4. While the egg is cooking, spread two slices of bread with a dollop of mayonnaise. Then add the chopped lettuce, avocado and tomato to one slice.
  5. Once the egg whites have cooked but the yolk is still oozy, add the egg to the top of the sandwich and sprinkle with salt and pepper.
  6. Place the other slice on top and serve!
