Pure Nature's Apple Cake with Fresh Yoghurt

An all-time favourite for a winter evening, you can never go wrong with a classic apple pie. Thanks to Pure Nature’s light and sweet yoghurt, this cake is a creamy and indulgent twist on the classic, and so easy to make, too.

What you'll need

  • 3 eggs
  • 60g almond flour
  • 80ml sunflower oil
  • 150g Pure Nature Organic Natural Yoghurt
  • 145g flour
  • 2tsp baking powder
  • apricot jam
  • 4 apples
  • 150g sugar
  • A pinch of salt

How to make

  1. In one bowl, stir together the flour with the baking powder, the almond flour and a pinch of salt.
  2. In a second bowl, beat the eggs with the sugar to obtain a light, airy texture.
  3. Add the oil and the yoghurt to the mixture in the second bowl, then fold in the flour mixture to create a batter.
  4. Pour the batter into a floured cake pan.
  5. Take the apple slices and arrange them on top of the cake.
  6. Bake the cake for 45 minutes at 180°C.
  7. Once baked through and cooled, remove from the pan, and brush the cake with the jam.
  8. Serve each slice with an extra dollop of yoghurt and tuck in!
