Sweet Potato and Cheese Croquettes

Add some extra tangy flavour to these classic nibbles with Barber's extra tangy cheddar and our organic sweet potatoes. These easy snacks make the perfect pre-dinner canapés on a cold evening, and you can bet there’ll be no leftovers the next day.

What you'll need

  • 750g sweet potatoes, roughly chopped
  • 2 egg yolks
  • 2 whole eggs, beaten
  • 100g homemade breadcrumbs
  • 50g Barber's Mature Farmhouse Cheddar
  • 1tbsp olive oil
  • 25g Netherend Farm Lightly Salted Butter
  • 50g plain flour
  • Salt and pepper seasoning

How to make

  1. Boil the chopped potatoes for 15 minutes, or until tender.
  2. Once drained, mash thoroughly while beating in the butter and 2 egg yolks.
  3. Mix in the cheese and seasoning, then leave the mixture for around 20 minutes until firm.
  4. Shape the mixture into small croquettes and set aside.
  5. In 3 separate bowls, place the flour, beaten eggs and breadcrumbs.
  6. One by one, dip each croquette in the flour, then egg, then finally breadcrumbs.
  7. Once each croquette is covered, line them up on a baking tray and bake at 200 degrees for around 20 minutes, or until golden brown.
