Rainbow Fruit Tart

This fruity recipe is the perfect way to get kids into baking, and it's healthy, too. One of the best parts of it is you get to be as creative as you like when it comes to choosing the colourful fruit toppings to make the rainbow pattern. What you'll need

  • 5 tbsps Pure Nature Organic Natural Yoghurt
  • Equal quantities of a selection of your favourite chopped fruit in rainbow colours – try strawberries, clementines, bananas, kiwi and blueberries using our incredible fruit boxes.
  • 1 large egg
  • 225g plain flour
  • 110g Netherend Farm Organic Unsalted butter
  • 80g sugar
  • 1 tbsp Thursday Cottage Acacia Honey

How to make

  1. Start by softening the butter by cutting it up into small cubes.
  2. In a large mixing bowl, 'crumb' together the butter and flour between your fingers, then add the sugar to the mix.
  3. Beat in the whisked egg until a soft dough-like pastry is formed. If it's too dry, add a dash of milk to soften, mixing everything together thoroughly.
  4. Roll out the pastry and fit it into a pie dish, then refrigerate for an hour.
  5. Once firmed in the fridge, bake the tart base at 200 degrees for 15 minutes.
  6. In a small bowl, mix together the yoghurt and honey to create a simple base for the fruit. Once ready, smooth it onto the surface of the tart base using the back of your spoon.
  7. Using your favourite chopped fruits, decorate the tart from the edge inwards to create the rainbow pattern. Enjoy as it is or with an extra drizzle of honey.
