What you'll need

  • 1 small avocado, mashed (or guacamole)
  • A slice red onion
  • 1 brioche roll
  • 2 rashers bacon
  • 1 large tomato, sliced
  • 1tbsp River Cottage ketchup
  • Lettuce
  • 1 egg
  • 1 beef burger
  • A few slices spring onion
  • 1 slice Red Leicester cheese

How to make

  1. Once you’ve heated up your barbecue, grill the bacon and the burgers for around two minutes on each side until the burger is cooked through and the bacon is crispy. Transfer to a plate lined with paper towel.
  2. Crack the eggs on a greased barbecue plate and cook for about two minutes for a soft yolk.
  3. Lightly grill the brioche bread rolls until lightly toasty.
  4. Spread the bases of the buns with the mashed avocado, then stack up your burger, finishing with a good helping of ketchup.
