What you'll need

  • 3 eggs
  • 185g unsalted butter
  • 185g Islands 65% Chocolate
  • 150g Islands 55% Chocolate
  • 70g plain flour
  • 250g golden caster sugar
  • 40g Islands Cocoa Powder

How to make

  1. Melt the butter and 185g 65% chocolate in a bain-marie.
  2. Mix the eggs and sugar together and whisk fast for 10 seconds until it just starts to become fluffy.
  3. Fold the melted chocolate-butter mixture through the eggs.
  4. Sift the flour and cocoa powder into the mix and fold through.
  5. Finally, fold through the 150g of 55% chocolate buttons.
  6. Pour into brownie tray, lined with parchment paper.
  7. Cook for 20-25 minutes and 160°.
  8. Allow to set overnight before slicing (or 3 hours in the fridge if you’re extra impatient).
