How to make

  1. Put butter, icing sugar, flours, vanilla extract and egg yolk in the bowl of a food processor with a pinch of salt and whizz together to a smooth dough. Cover and chill for 1 hour.
  2. Preheat oven to 160°C/140°fan/Gas 3. On a flour-dusted surface, roll out dough to 3mm (1/10in) thick. Stamp out 8cm (3in) rounds, then, using a 2cm cutter, stamp out the middle of each round and set aside. Transfer biscuit rings to lined baking sheets, then bake for 10-12 minutes until lightly golden. Transfer to a wire rack to cool completely.
  3. In a bowl, mix royal icing sugar with enough cold water to make a smooth, spreadable icing. Divide between 4 small bowls and use food colour gels to make three pale-coloured icings, keeping one white.
  4. Spoon white icing into a piping bag fitted with a writing nozzle. Spread a biscuit with your choice of coloured icing then, while still wet, pipe three white circles on top. Use a skewer to drag the icing across the lines starting from the centre for a feathered pattern. Leave to set.
