Valentine's Cupcakes

Prep Time: 30 mins | Cook Time: 10-15 mins | Makes: 9 cupcakes

110g Softened Netherend Farm Unsalted Butter

110g caster sugar

2 St Ewe Free Range Eggs, lightly beaten

1 tsp vanilla extract

110g self raising flour

1-2 tbsp Milk & More Organic Semi-Skimmed Milk

For the buttercream icing:

140g Softened Netherend Farm Unsalted Butter

280g Icing sugar

1-2 tbsp Milk & More Organic Semi-Skimmed Milk

Few drops of food colouring
1. Preheat the oven to 180°C.

2. Line a cupcake tin with paper cases.

3. In a large bowl, cream together the butter and sugar until pale.

4. A little at a time, beat in the eggs and stir in the vanilla extract.

5. Using a large metal spoon, fold in the flour and add the milk a little at a time until the mixture is of dropping consistency.

6. Spoon the mixture into the paper cases until they are half full.

7. Bake for 10-15 minutes or until they are golden brown. Then set aside to cool for ten minutes.

For the buttercream icing:

1. In a large bowl beat the butter until soft. Add half the icing sugar and beat until smooth.

2. Add the last of the icing sugar with one tablespoon of milk until the mixture is smooth and creamy. Add more milk if necessary.

3. Add the food colouring and mix until well combined.

4. Spoon the icing into a piping bag with a star tip nozzle and pipe a rosette.
